Strawberry whipped cream with mascarpone

Ingredients:
- 350 g strawberries
- 400 g whipping cream
- 50 g icing sugar
- 2 Pck. whipping cream stiffener
- 1 Pck. vanilla sugar
Procedure:

Clean the strawberries and cut them into fine pieces.

Blend 150 g of them until smooth.

Beat the cold cream with the powdered sugar and vanilla sugar until stiff.

Before the end, add the cream stiffener and the pureed strawberries and mix well again.

Finally, stir in the chopped strawberry pieces and cool the strawberry cream.
The cream can be used in desserts in a glass, as a filling for cakes, or in roulades.

We can carefully remove the baking paper as soon as the dough has cooled. Now, heat the jam and spread it on the sponge cake with a brush. This layer of jam is important not only for the taste but, above all, because it separates the sponge cake from the whipped cream and prevents it from penetrating the cake.
Allow it to cool briefly, and spread the strawberry cream evenly over two-thirds of the dough.
Now, using a kitchen towel, we roll up the sponge cake carefully and with light pressure. As we roll it, some of the cream is squeezed out and fills the last third. The outside of the roulade can now be spread with cream and decorated with strawberries or sprinkled with powdered sugar.
